
In the recent 12-day crisis, which imposed extensive restrictions on the movement of goods between Iranian provinces, especially rice and oil products. In the area of bread, despite initial concerns, the crisis was quickly managed and peace returned to society; but this success was more due to the coincidence with the wheat harvest season and its abundance, rather than the complete readiness of the system.
One of the vulnerable points of the flour industry is energy supply. Power outages in flour factories, which consume about one megawatt of electricity per day, are a major threat, because many of them are not equipped with generators, and even if they do have generators, there is no guarantee of fuel supply in a crisis. There must be a fundamental review of the sustainability of the energy chain and better preparedness of the flour and wheat supply system against crises.
