Industrial and fancy bread production in Iran has grown due to urbanization and changing lifestyles, but faces challenges like rising raw material costs, inflation, and skilled labor shortages. During a recent 12-day conflict, bakeries struggled with workforce shortages, though flour supply was managed through government support.
Farahani, a member of the Large and Semi-Large Bakers Union, emphasized the importance of simple breads like lavash for food security in emergencies due to easier production and storage. Rising flour prices have caused a 35-40% sales decline in industrial breads.
He highlighted the vital role of young, innovative professionals in revitalizing the bread industry and strengthening food security through innovation and government support.
